Cocktail of The Month: Raspberry Limoncello Prosecco
Morning lovely ones, how are you all this Tuesday morning? It seems that the gorgeous sun is slipping away from us and I’m definitely not one to love this kind of weather! Is it just me or does it affect your mood terribly when it’s not 100% out there? However, I do recon we have just the feature to pull you through this rather gloomy day. Yes, you guessed it. It’s our favourite one – Cocktail Of The Month.
I’m sure today’s delicious concoction will make you want to grab your perfectly crafted floral crown and douse yourself in sparkly golden bronzer. It’s one that just shouts summer weddings, and would be perfect for a bubbly sweet treat for wedding guests too. Summer occasions call for luxurious and refreshing cocktails. Of course, if the weather holds out there is nothing better than enjoying a little tipple in the sun. As standard, reception drinks often consist of Prosecco, Pimms, and beer by the bottle. Why not mix it up and choose something that will WOW your guests. A fruity and refreshing kick on a summers day definitely won’t go missed. After-all, you have more than likely put so much effort into all the little, and big details at your wedding, so why forgo the drinks?
Our cocktail of choice this month is the oh-so tasty Raspberry, Limoncello and Prosecco.For an end-of-summer sip, it doesn’t get any better than this cool, refreshing cocktail with fragrant fresh mint. If you like your drinks sweeter, add more limoncello – a thick, lemony vodka syrup – or if you like ‘em dry, a little does the job. Sounds lovellyy, right?
Ingredients (To Make 4)…
- 70cl Prosecco or other sparkling wine, chilled
3 1/2 Tbsp raspberry sugar syrup*
mint leaves, to garnish
lemon slices, to garnish
raspberries, to garnish
- *For the raspberry sugar syrup:
120g granulated sugar
1 Tbsp lemon zest
¼ tsp lemon juice, freshly squeezed
First of all, make your sugar syrup by combining the sugar, water, lemon zest and lemon juice in a saucepan over medium heat. Bring the delicious mixture to a boil, then add fresh raspberries and simmer for 5 minutes, ensuring you are stirring frequently. Next, remove from the heat and allow to sit for 5 minutes. Finally, strain the syrup into a bowl and allow to cool fully. Keep stored in an air-tight container whilst not in use.
To make the cocktail, combine the Prosecco, limoncello and the raspberry sugar syrup in a large pitcher with ice. Or our personal favourite, frozen raspberrys for yummy berry ice cubes. This makes for a lovely treat in Summer.
Prepare 4 glasses by rimming them with caster sugar. Pour your cocktail into the glasses and garnish with extra raspberries, lemon slices and mint leaves to serve.
